underground water.
This sake offers a refined taste similar to ginjo sake, with a
crisp, dry finish.
Yokoyama Junmai Ginjo〈Nagasaki〉

In 2018, the brewery revived sake brewing on Iki Island after 28
years.
This fruity and beautiful sake offers a juicy sweetness and acidity,
reminiscent of tropical fruit juices.
Matsu no Tsukasa Tokubetsu Junmai〈Shiga〉

Matsuse Brewery, located in Ryuo Town, is a representative sake
producer from Shiga Prefecture.
This junmai sake uses Ryuo Town-grown rice (such as Yamada Nishiki)
polished to 60%, comparable to the quality of a junmai ginjo.
With a refined aroma and a mild rice flavor, balanced with a clean
acidity, it is a distinguished sake perfect for pairing with food.
Kuruma Saka Yamahai Junmai Daiginjo〈Wakayama〉

Brewed by a young female toji (master brewer) in her 30s, at a
brewery in Iwade City, Wakayama Prefecture.
This daiginjo sake has a gentle aroma and a refined, slightly dry
taste, developed through about three years of aging for a smooth,
elegant umami.
While it’s delicious at room temperature, it is especially
recommended to be served warm.

Kiya Masamune Brewery, located in Nabari City, Mie Prefecture, is
known for consistently investing in equipment to improve
quality.
As they produce a small variety of sake with single shipments, the
specifications of Jikon change from time to time.
What type of Jikon is available will be a surprise when you
visit.
All varieties of Jikon consistently offer a vibrant, fruity flavor
with a smooth, transparent finish, and an excellent balance of
sweetness and acidity.

polished to 45%,
